1 c. butter, softened
1 c. granulated sugar
¾ c. light brown sugar, packed
2 tsp. vanilla
1/2 tsp. salt
2 eggs
2 ½ c. all purpose flour
1 tsp. baking soda
10 oz. white chocolate (chips or bars cut in chunks)
1 c. macadamia nuts, chopped into chunks

Pre-heat oven to 375º F.
In large bowl, beat butter, granulated sugar, brown sugar, vanilla, and salt with electric mixer until creamy. Add eggs, beat well. Stir together flour, and the baking soda; gradually add to butter mixture,beating until well blended.

Stir in white chocolate chips and macadamia nuts. Drop by rounded teaspoons onto ungreased cookie sheet. Bake 8 to 10 minutes or until set. (Edges are golden brown and center is set.) Cool slightly (about 5 minutes) before removing from cookie sheet to wire rack to cool completely.

I love this recipe, but not everyone in my family loves white chocolate or macadamia nuts... So, I use this recipe for regular chocolate chip cookies as well and just substitute accordingly. It seems not to be as heavy as standard chocolate chip cookies recipes.
