¾ c. raisins
¾ c. boiling water
½ c. butter, softened (1 stick)
¾ c. honey
¾ c. whole wheat pastry flour
¾ c. unbleached white flour
2 tsp. baking powder
¼ tsp. salt
2 tsp. cinnamon
¼ tsp. each cloves and ginger
⅓ c. milk
1¾ c. rolled oats
½ c. chopped walnuts

Pour boiling water over the raisins and allow to soak for 15 min; drain and squeeze dry.

Cream butter and honey together until light and fluffy.

In small bowl, mix the flours, baking powder, salt, and spices. Stir in honey-butter mixture, alternating with milk. Stir in oats, walnuts, and raisins.

Roll into balls, using 1 T. mixture per cookie. Place on oiled cookie sheet and flatten slightly with hand.

Bake 10 minutes at 350ºF until lightly golden.
