1½ lbs boneless, skinless chicken thighs
1 t. dried oregano
1 Tbsp. minced garlic
1 c. sliced onions
2 c. mushrooms
1 15oz. can chicken broth
3 c. instant rice, uncooked
salt and pepper to taste
optional: 1/2 c. sliced carrots

1. Season chicken thighs with salt, pepper, oregano

2. Place chicken in a 6-quart slow cooker. (I like to use the liners for easier cleanup).

3. Add garlic, onions, mushrooms, (optional carrots), and chicken broth into the slow cooker. Cover and cook on high for 3 hours.

4, Stir in uncooked rice and continue to cook on high for 30 minutes, or until rice is cooked through.
