1 cup bread flour
1 cup all-purpose flour
1 cup whole wheat flour
¾ cup rolled oats ( quick )
2¼ tsp ( 1 pkg ) yeast
1½ tsp salt
1 cup whole milk
¼ cup very warm water
2 Tbsp. lard or shortening
¼ cup Honey
¼ cup sunflower seeds
¼ cup pumpkin seeds ( green )

Add: flour, oats, yeast and salt to a large bowl of a standing mixer ( you can do this with out a large stand mixer it will just take a little arm muscle )
in a sauce pan: add milk, water, lard and honey. Bring to a simmer. let cool to 115 degrees
Pour over dry ingredients, with the mixer on slow speed, after all ingredients are well incorporated turn the mixer on med. spreed, mix for 10 min.
put dough on a floured surface and knead in pumpkin and sunflower seeds
put into well greased large bowl, turn dough over and cover with plastic wrap to seal, place in warm area,rest for 1 hour.
take dough out and on a floured surface shape into a rectangle and roll up and place into a bread pan. let rest 1 hour.
.brush top with egg wash ( 1 egg and 1 tbsp water beaten )
Bake in center of oven at 350 degrees for 40 min.
I place a cake pan on rack below bread with ¼ cup of water in it. this gives the bread a nice crust
