1 cup flour
¼ cup cocoa
1¼ cup powdered sugar, divided
1¼ tsp. baking powder
⅛ tsp. salt
5¼ tsp. canola oil
1½ oz. unsweetened chocolate, chopped (semi-sweet)
1 tsp. instant espresso granules (or 2 tsp. instant coffee)
¾ cup packed brown sugar
3 tbsp. corn syrup
1½ tsp. vanilla
2 large egg whites

Oven to 350º F. Mix flour, ¾ cup powdered sugar, cocoa, baking powder, and salt in a bowl. Combine oil and chocolate in a saucepan and melt over low heat, whisking continuously. Add coffee granules and stir until blended. Remove from heat and pour into a bowl to cool for 5 minutes. Stir in the brown sugar, corn syrup, and vanilla. Add egg whites and whisk. Add flour mixture and stir. Cover and chill. Roll into 24 little balls (or more). Roll the balls in the remaining icing sugar. Bake for 10 minutes and cool on the pan.
