1 Box Girl Scout Thin Mints Cookies
6 Tbsp Melted Butter

Pie Filling

1 1/4 cup heavy cream
1 8oz. pkg Cream Cheese, softened and at room temp.
1 1/4 cup powdered sugar
green gel food coloring
1 tsp vanilla extract
1 tsp peppermint extract
1 1/2 cups mini chocolate chips
Hershey's Chocolate Syrup

Crust:

- In a food processor, or in a large ziplock bag, crush all but 3 of the thun mint cookies (the 3 you will use as a topping for the pie later)
- combine with melted butter until tacky, but still crumbly
- Press into the bottom and up the sides of a 9" pie pan
- Chill for at least 30 minutes

Pie Filling:

- With a hand mixer, in a medium bow, beat the heavy cream until the consistency of creamy whipped topping. Set aside
- In a large bowl, use the same hand mixer to beat together the cream cheese, powdered sugar, 3 large drops of food coloring and both the vanilla and peppermint extracts until smooth
- With a rubber spatula, mix in the whipped cream until well combined.
- Add the mini chocolate chips and mix until just combined
- Pour the pie filling into the crust and spread evenly
- Top with drizzles of chocolate syrup, and cut the remaining cookies in half, placing them (standing on their edges) in the middle of the pie
- Chill for at least one hour before serving
