1 cup unsalted butter, softened
Nonstick aluminum foil
Cooking spray
1 cup sugar
1 tsp vanilla extract
½ tsp kosher salt (+more optional for sprinkling)
2 ¼ cups all-purpose flour
1 (10.8 oz) package Werther’s Original Chewy Caramels
¼ cup heavy whipping cream
2 cups Nestle Toll House semi-sweet chocolate morsels

Directions:

1. Set butter out to soften - Preheat oven to 350º - line 13”x 9” baking dish with foil then coat with spray.
2. Place butter and sugar in a large bowl - beat with electric mixer until fluffy and pale yellow - beat in vanilla, salt, and flour until combined and crumbly then spread dough evenly into baking dish - bake for 25-30 min or until golden - let stand to cool in pan for 1 hour (or until completely cool)
3. Place caramels and cream in medium saucepan over medium heat - cool for 4 to 5 min, stirring occasionally, or until well blended and smooth - pour caramel evenly over cooled shortbread
4. Place chocolate in microwave-safe bowl - microwave on high in 30-second intervals until melted and smooth - pour chocolate evenly over caramel, then chill 30 minutes (or overnight) until set – cut into bars and serve sprinkled with additional salt, if desired.
