1.5 - 2 lb Salmon Filet - washed, dried and fish bones removed


FOR THE BRINE:

3/4 C cold water
1/4 C Jack Daniels Tennessee Honey (no substitutions).
2 TBS Kosher salt
1 TBS Brown Sugar
1/2 tsp Onion Powder
1/2 tsp Fresh cracked Black Pepper
1/8 tsp ground Cinnamon

FOR GLAZE:

3 TBS Honey
1 TBS Fresh Squeezed Orange Juice + zest of 1 orange
1-3 tsp Jack Daniels Tennessee Honey

Directions:
Directions:
1. Marinate fish flesh side down, in a non-reactive dish (glass or porcelain) for about 1-hour. Meanwhile heat your grill to 250F. Use whatever wood smoking chips (prefer apple).

2. Remove fish from marinade, pat dry with paper towels, dust each side of fish with Paprika.

3. Place on grill or flat top (cast iron or soapstone) skin side down. Cook for about 30-mins.

4. Paint fish with glaze; remove from grill and serve.
