For the Gnochi

2 potatoes
2 cups all-purpose flour
1 egg
parmessan cheese (picorino romano)
salt, pepper, nutmeg


For the tomatoes sauce

3 tbsp of olive oil
1 large onion diced

2 cloves garlic minced
½ large red pepper diced
2 cans stewed tomatoes diced
2 bay leaves
1 tsp oregano
1 tbsp of sugar
½ cup of water

Directions:
Cook the potatoes, (no over cook, Al Dente, are ready when fork go down, no suppose to open the skin.) Peel the potatoes and smashed. Add the eggs, salt, pepper, nutmeg and parmessan cheese.to the mash potatoes. Mix well. Mix in the flour, until a soft, but not too sticky, dough come together. Turn the dough out onto your counter and knead it with your hands and incorporate more flour if is needed.Your dough should be soft, but no sticky, it should be easy to work with and shape.Divide the dough into 4 section. Working with one section at the time, roll into a rope , 1 inch in diameter. Cut the rope 1 inch pieces for your gnocchi or gnocchi and roll it on the back of a fork pressing with your thumb. In a large pot of salted water, boil the gnocchi. Simmer the gnocchi for 4 minutes, until they float to the top of the water. Top the gnocchi with the sauce and parmesan cheese, Sprinkle with chopped parsley and basil.

Almost all the family eat Gnochis on Sunday or the 29th . Now families and friends gather together to eat Noquis the 29th for good luck .In Argentina.
