Romaine hearts (1/2 for each person)
Olive oil
Balsamic vinegar (or any other salad dressing)

Toppings! Whatever combination sounds good to you

Sauteed veggies - onions, carrots, mushrooms
Protein - Bacon bits, grilled chicken, chickpeas, hard boiled eggs
Cheeses - feta, parmesan, mozzarella blue cheese
Fruits - strawberries, clementines or mandarin oranges, blueberries
Nuts and seeds - walnuts, slivered almonds, pine nuts, sunflower
Fresh or grilled tomatoes
Corn
Avocado

Directions:
Directions:
1. Cut washed romaine hearts in half, lengthwise. Leave the stem on so the leaves stay together. Set aside.

2. Heat your grill or cast-iron skillet on high. You want it very hot so that you get a quick char without cooking (and wilting) the lettuce.

3. Prepare your favorite toppings from the ingredients list. Or add in your own!

4. Brush small amount of olive oil on the cut side of the romaine heart.

5. Place romaine halves cut side down on the grill or skillet for 30 seconds or so.

6. Plate the romaine halves and turn off grill or skillet.

7. Add your prepared toppings.

8. Drizzle with a little more olive oil and balsamic vinegar. Or any salad dressing of your liking.
