Chicken bones, parts
Water to cover bones (about 8 cups)
3 - 4 chicken bouillon cubes
1 large onion, chopped
2 stalks celery, chopped
2 - 3 carrots, peeled and chopped or sliced
1 potato, cubed
1 bay leaf
2 tsp. dried parsley
salt & pepper (10 - 12 peppercorns are best)

Directions:
Directions:
Place chicken bones in a stockpot and cover the chicken parts with water (approximately 8 cups).
Add all the other ingredients to the pot.
Bring to a boil, then turn down to simmer for at least 2 hours.
[Optional] Add noodles or dumplings to soup, bring to a boil, and then turn down and cook for 15 minutes.
Serve.
