Ham bone
1 cup of diced ham
Package of dried peas
2 carrots, peeled and diced small
3 stalks celery, diced small
1 large onion, diced small
peppercorns (12 - 14)
½ tsp. salt
¼ tsp. nutmeg
1 bay leaf
no more than 4 cups water

Directions:
Directions:
Soak peas overnight.
Drain, then add ham bone, dried ham, peas, carrots, onion, celery, and spices.
Add liquid to cover solids in the soup pot but no more than 4 cups.
Bring to a boil then turn down to simmer. Cook for 3 hours.
Take the bay leaf out before either putting soup into a blender or mixer to smooth the mixture.
Serve.

Note: Freezes well. Before serving, heat at low or medium heat, stirring continuously.
