1 - 1˝ cups dry beans
1 Tbsp. olive oil (or vegetable oil)
2 cloves garlic, chopped or crushed
1 onion, chopped
2 stalks celery, chopped
2 carrots, peeled and chopped
3 cups chicken stock
3 cups vegetable stock

Directions:
Directions:
Prepare beans. If using dry bean, soak overnight or bring to boil in a pot and turn off the heat and let it sit for 1 hour.
In a skillet on the stove, sauté garlic, onion, celery, and carrots.
Place beans and vegetables in a soup pot and add chicken stock, vegetable stock.
Bring to a boil and turn down to slow simmer. Cook for several hours (2 - 3 hours).
To test for readiness, beans will be soft.
Best if sets overnight and is warmed up.

Variation: Add 1 can of tomatoes.
