2½ cups (10½ ounces) King Arthur Unbleached All-purpose Flour
1 tsp. salt
1 tsp. sugar
1 Tbsp. buttermilk powder (optional, for flavor & tenderness)
1 cup (2 sticks, 8 oz.) cold unsalted butter, cut into pats
4 to 8 Tbsp. (2 to 4 oz.) ice water

Directions:

Whisk together the dry ingredients.
Work into butter, mixing until uneven crumbs form.
Mix enough water to make the dough hold together when squeezed.
For easiest rolling, divide dough in half, wrap & chill for 30 minutes before rolling the dough.
