Olive oil
1 can (15 oz.) stewed or cut-up tomatoes
1 medium onion – chopped/minced
˝ green pepper – chopped/minced
1 stalk celery – chopped/minced
2 - 3 tsp. of sugar (optional)
oregano to taste
Chicken – cut to bite-size.
Pasta – any type. (Spaghetti, linguine, etc.)

Directions:

Chop up vegetables and then mince them, the smaller the better.
In a skillet on the stove, sauté onions, peppers, celery, & oregano in olive oil.
Add tomatoes and sugar.
Simmer at least 20 minutes (e.g., first, bring to a boiling point then turn heat to simmer). Longer simmer enhances flavor, or you can make early and allow it to set (reheat before serving).
Broil or grill chicken separately (George Foreman, or sauté it in a little olive oil).
Add chicken to the sauce before serving over pasta (linguine, spaghetti, or any other pasta).
