4 skinless boneless chicken breast halves
1 package taco seasoning mix
2 Tbsp. cornstarch
¼ cup (or less) water (just need enough to mix with cornstarch)
1 cup salsa
¼ cup light sour cream

Directions:
Directions:
Spray the slow cooker with cooking spray.
Add chicken breasts.
Sprinkle the chicken with taco seasoning.
Pour the jar of salsa on top.
Cook on low for 6 hours.
When ready, remove the chicken from the pot.
Place the cornstarch in a small amount of water and stir well.
Stir in the cornstarch and water mixture into the salsa sauce in the slow cooker.
Stir in the sour cream to the mixture.
Place the chicken and salsa mixture into a serving dish.
Serve over rice or noodles.
