Pot roast or chuck roast
10 c cold water
2 c beet tops only, chopped
1 c fresh dill weed, chopped
2 c green onion and tops, chopped
2 cloves garlic, chopped
¾ c rice
2 - 3 potatoes
5 eggs
1 c sour cream

Directions:
Directions:
Heat water. Add pot roast or chuck roast to water and cook until done. Then grind meat and place back in water. Place beet tops, dill, green onion, garlic, rice and potatoes in soup. Beat 5 eggs. Add the beaten eggs to soup. Stir. Simmer until the eggs are cooked. Add the sour cream to the Borscht and mix. This soup has a green color as there are no beets in it other than the tops.

Grandma Helen said this is how borscht was made in the Frank region of Russia where Great-grandpa Con and Great-grandma Anna lived. We loved it when Grandma Helen would make it for our family. I used to call her when I was making borscht to make sure I had her input. Stan (Skip) Miller says it is "Excellent!"
