2 # bacon
3 1/2 # potatoes , boiled, peeled, diced ( should be about 7 cups).
1 1/2 c. chopped onion
1/4 c. Flour
1/4 c. sugar
1 1/2 c. water
1/4 c. cider vinegar
1 1/2 t. salt
1/4 t. Pepper
1/2 c. Light cream
Directions:
Directions:
cook bacon until crisp , drain and reserve 3 T. of drippings.

crumble bacon. Then toss with potatoes and onion.

Combine flour and sugar and stir into the drippings.

Mix water, vinegar,salt, pepper.

Stir into skillet.

Cook and stir until thickened.

Add cream and pour over potatoes.

Toss to coat.

Serve warm.
