2 cups flour
1 tsp baking powder
1 package of saltine crackers (crushed as small as possible)

2 tsp salt
1 tsp black pepper
1 tsp crushed red pepper

*2tbs A Cajun Life, All-Purpose Season is our favorite

2 eggs
˝-ish cup milk
Peanut oil (or other oil/shortening)
4-6 pieces of boneless skinless chicken breasts (tenderloins work better IMO, use the whole bag)  sliced into smaller pieces

1. Mix flour, baking powder, crushed saltine crackers, salt, pepper and red pepper in a bowl.  
2. Mix eggs and milk in separate bowl
3. Heat oil (about ˝ inch) in electric skillet 360 degrees
4. Dip chicken in flour mixture, dip in egg mixture, return to flour mixture
5. Cook in oil 10 minutes
6. Flip and cook another 5-8 minutes until cooked through
7.Keep Warm in oven at 250 degrees if necessary
