1-1/2 lb. lean ground beef
1-1/2 c. soft bread crumbs
1/2 c. finely chopped onion
1/2 c. finely chopped celery
1/4 c. finely chopped green bell pepper
1-1/4 t. salt
2 eggs, slightly beaten
1/2 c. catsup (divided)
1 c. shredded cheddar cheese
1 c. (4 oz) sliced mushrooms
2-3 strips bacon
1 t. mustard
1 regular size (10" x 16") oven bag

Directions:
Preheat oven 325º F. Combine all ingredients, except bacon, mustard, and half the catsup, in a medium bowl. Mix well. Place mixture in regular size oven bag and place bag in a 12 x 8" (or a 13 x 9") baking dish. Shape mixture in bag into a loaf. Lay strips of bacon over loaf. Sprinkle 1 Tbsp. flour around the loaf, close bag with twist tie, and pierce bag with 4-5 vent holes on top of bag. Bake at 325º for 20 minutes, then remove and open bag. Combine 1/4 c. catsup and 1 t. mustard and spread on top of loaf. Re-close bag and continue to bake another 25 - 30 minutes. Make sure it is cooked well-done in the center.
