1 whole fryer or cut up chicken, not over 2-1/2 lbs.
Salt & Pepper
(optional) small amount of cooking oil

You may also use this method for plain chicken wings.

If fryer is whole, remove giblets and neck from inside cavity and freeze to use elsewhere. If desired, prepare pan by lining with foil for easier clean up.

Brush breast and legs with oil and season with salt and pepper. Place skin side down in a broiler pan (no rack) or dutch oven. Broil 5-7 inches from heat for about 20 minutes, until lightly browned. Brush oil or baste with juices, and turn over. Salt and pepper top side and broil 20 minutes longer. When drumstick moves easily, chicken is done.

NOTE: When cooking wings, check often as it may take less time. DO NOT use a shallow cookie sheet, as there needs to be enough depth to the pan to catch all the grease that will cook out.
