8 oz dried rice noodles
6 fresh shiitake mushrooms, sliced
3/4 cup yellow or red bell pepper, thinly sliced
3/4 cup carrot, thinly sliced
1 cup cabbage, sliced
1 cup broccoli florets, cut up small
1/3 cup green onions, cut up
1 tsp turmeric powder
1 1/2 tbsp curry powder
2 tsp sea salt
1 1/4 tsp pure honey
1/8 tsp freshly cracked black pepper
1/4 cup olive oil
3 cloves garlic, minced
1 tbsp mirin or 1 tbsp rice vinegar & 1/2 tbsp pure honey
8 cups hot water

Directions:
Directions:
Soak rice noodles in a large bowl with 8 cups hot water for 30 minutes
Drain and set aside
In a small bowl mix together, turmeric powder, curry powder, salt, honey, pepper and mirin
Heat wok to medium high and add olive oil
Add the garlic, mushrooms, bell pepper, carrot, cabbage, broccoli and 3/4 green onions
Stir fry for about 2 minutes
Add the curry mixture and mix thoroughly with the vegetables for another 2 minutes
Add the noodles and mix until all the noodles are covered with the curry mixture and the noodles are warm
Add 2 tbsp of hot water if it is sticking to the pot
Add the balance of the green onions
Remove from heat and serve
