1 large red cabbage, sliced thinly
1 cup red wine
1/2 cup red wine vinegar
1 tsp salt
1/4 cup sugar
1/2 tsp thyme
1/2 cup water
1/4 cup oil
1 onion, thinly sliced

Directions:
Directions:
Combine the red cabbage, wine, vinegar, salt, sugar, water and thyme and marinate the mixture in the refrigerator. Drain, reserving the liquid. In a heavy saucepan, heat the oil and sweat the onion slowly. Add the drained cabbage and stir. Add the reserved liquid and cook, covered, for 1 1/2 hours. Remove the cover and cook the cabbage until the liquid is almost evaporated.

Serve with roast pork
