Berry Oat Crumble Recipe

1 Tbsp. cornstarch
1 pint blueberries
1 pint raspberries
1 pint blackberries
1 quart strawberries
1 Tbsp. lemon juice

cup all-purpose flour
to 1 cup oatmeal
to cup brown sugar
1 to 2 tsp. ground cinnamon
cup (1 stick) cold butter, cut into pats

[Optional] 3 Tbsp. finely chopped crystalized ginger

Preheat oven to 375.
Fruit: Rinse fruit and drain in a colander. Cut up strawberries into smaller pieces. Sprinkle berries with lemon juice.
Put cornstarch into a large bowl and add berries. Toss to coat.
Divide berry mixture evenly among 8 - 12 ramekins (6 oz.). [Tip: the number of ramekins is determined by the amount of berries.]
Topping: In the same bowl, combine flour, oats, brown sugar, and cinnamon. With fingertips, work in butter until coarse crumbs form [Optional: mix in crystallized ginger.]
Crumble topping over fruit.
Place ramekins on a large rimmed cookie sheet.
Back 30 minutes, or until topping browns and fruit is bubbly.
Cool on a wire rack and serve warm or at room temperature.

[Tip: Extras can be covered and stored in the refrigerator. To heat: microwave ramekin for 30 seconds.]
