1/2 C Low-Sodium Soy Sauce
1/3 C Extra-Virgin Olive Oil
1/4 C Brown Sugar
1/2 C Bourbon
1/8 Tsp Red Pepper Flakes
2 Tbsp Whole-Grain Mustard
2 Tsp Cajun Seasoning
2 Cloves Garlic minced
1 Tsp fresh Thyme
2 Tbsp Butter cut into blocks
Chopped Parsley for garnish

2 Lb Tri-Tip Steak or thick sirloin Cut

1. In a large bowl, whisk together Soy Sauce, Olive Oil, Brown Sugar, Bourbon, Mustard, Cajun Seasoning,Garlic, Thyme and Red Pepper Flakes. Pour out about 11/3 of mixture to use for glaze later. Toss Steak in mixture and let marinate for 20 minutes. If marinating over 20 minutes, cover with plastic wrap and refrigerate.
2. Heat Grill to High. Remove Steak from marinade and season both sides with Salt and Pepper. Grill until charred on bottom, about 10 minutes. Flip and lower grill to Medium-High and cook for 10 minutes or until thickest part of Steak is at 130º . Remove from grill and let rest on cutting board and slice against the grain in 1/2 inch slices.
3. While grilling, make Glaze. Pour reserved marinade into a small saucepan bringing mixture to a boil over medium-high heat. Reduce heat to medium and cook until mixture has slightly thickened and whisk in Butter until melted and remove from heat.
4. Brush glaze over Steak and garnish with Parsley and serve hot.
