Ingredients: 1 cup olive oil or vegetable oil or a combination, plus extra as needed 30 garlic cloves, peeled, root ends trimmed

Directions:Combine oil and garlic in a small saucepan, garlic should be just submerged. If not add extra oil to cover. Bring to a bare simmer over medium-low heat. Reduce heat to low so tiny bubbles surround the garlic. Continue cooking and stirring occasionally, until garlic is soft and pale tan, 30 to 35 minutes. Garlic should be soft enough to smear on the back of a spoon.
Off heat, let garlic cool at least 15 minutes. Remove garlic from oil. Strain oil through a fine-mesh strainer. Store garlic and oil separately for up to 1 week in the refrigerator or in the freezer for 6 months. |

Ingredients: 1 recipe garlic confit 7 ½ ounces flour 1 ounce Parmigiano-Reggiano cheese, grated ½ teaspoon baking powder ½ teaspoon salt ¼ teaspoon pepper Pinch of cayenne pepper 8 tablespoons unsalted butter, cut into 8 pieces and chilled

Directions:In a small bowl, mash the garlic confit to form a smooth paste. In a food processor, process the flour, cheese, baking powder, salt, pepper, and cayenne until combined, about 10 seconds. Add the butter and garlic paste, process until dough forms a ball, about 35 seconds. Transfer the dough to the counter and divide in half. Roll each half into an 8-inch log. Wrap in plastic wrap and chill for at least 1 hour.
Preheat oven to 325°F. Adjust oven racks to lower and upper middle. Line two baking sheets with parchment or silicone baking mats.
Unwrap the logs and slice into ¼-inch thick cookies.
Arrange on the prepared sheet pans, spacing ½-inch apart. Bake until light golden around the edges, about 16 minutes, rotating the positions of the pans halfway through baking. Cool on the pan on a cooling rack until completely cool.
