BBQ Chicken Pizza Recipe

Pizza crust (homemade or store-bought)
1-2 tsp olive oil
1/3 C. plus 2 Tbsp of your favorite BBQ sauce
1 C. chopped or shredded cooked chicken
2/3 C. shredded mozzarella cheese
2/3 C. shredded smoked gouda cheese
1/2 small red onion, thinly sliced
Bacon (optional)
Bell peppers (optional)
Chopped fresh cilantro (optional)

1. Preheat oven to 475F
2. Brush pizza dough lightly with olive oil. Using your fingers, put dents into surface of the dough to prevent bubbling. Top the dough evenly with 1/3 C BBQ sauce.
3. Toss the cooked chicken with the remaining BBQ sauce and then scatter around the pizza. Add the cheeses and onion and other optional toppings.
4. Bake for 12-15 minutes. Remove from oven and optionally top with fresh cilantro. Slice and serve immediately.
5. Leftover baked pizza can be frozen for up to 3 months, if desired.
