2 Pork shoulder or loin chops (6 oz each)
1/2 c. thinly sliced carrots
1/3 c. unfermented apple cider
1/4 c. sliced onion
1/4 c. sliced celery
1/2 small mango, pared, pitted and diced
1/2 small apple, cored and diced
1 Tbsp. golden raisins
1 c. cooked long-grain rice (hot)

Directions:
On rack in broiling pan, broil pork chops 6 inches from heat source, turning once, until rare, 2-3 minutes on each side. Remove from broiler and set aside.

Preheat oven 350º. In 8" X 8" x 2" pan, combine fruits and vegetables (carrots, cider, onion, celery, mango, apple, and raisins). Top with pork chops, cover and bake until pork chops are thoroughly cooked through. 30-40 minutes.

Serve over hot rice.
