BBQ Sauce:
2 T. oil
1 Medium diced onion
3 cloves of chopped garlic
2 c. ketchup
1/2 c. water
2 T. ancho chili powder
1 T. paprika
2 T. Dijon mustard
2 T. cider vinegar
1 T. Worcestershire sauce
1-2 T. chipotle sauce (from adobe in chipotle sauce can)
1/4 t. cayenne
2 T. dark brown sugar
1 T. honey
2 T. molasses
Salt and pepper to taste

Garlic Toast:
6 T. unsalted butter
2 cloves finely minced garlic
Salt and pepper to tasste
8 (1/2 inch) slices sourdough bread

Sloppy Joes:
1 T. oil
2 lbs. ground chuck (80/20)
Salt and Pepper to taste
1 c. diced, red onion
1/2 c. diced celery
1/2 c. diced poblano pepper
1 c. diced red bell pepper
4 cloves finely minced garlic
1 T. ancho chili powder
1 1/4 c. BBQ sauce from above
1/4 c. water
1/4 c. ketchup
1 T. Dijon mustard
1 t. Worcestershire sauce
1 T. honey
1 T. brown sugar
1 T. molasses
2 T. apple cider vinegar
1/2 c. flat leaf parsley or cilantro, plus more for garnish

BBQ Sauce:
Heat oil over medium-high heat in medium saucepan. Add onions and cook 3-4 minutes. Add garlic and cook for 1 minute. Add ketchup and water and bring to a boil. Reduce heat and simmer for 5 minutes. Add the remaining ingredients and simmer about 10 minutes.

Let cool, til its warm. Transfer to a food processor and puree until smooth, season with salt and pepper. Allow to cool before storing. Will keep 1 week in the refrigerator.

Garlic Toast:
Combine butter and garlic in small saucepan and cook over low heat until butter is melted. Season with salt and pepper. Remove from heat and let sit 5 minutes. Broil both sides of the bread, then spread with the garlic butter.

Sloppy Joes:
Heat oil in large pan. Brown the beef and add the salt and pepper. Drain beef, saving 1 T. of the fat to put back in the pan. Using same pan, saute the onions and celery for 3 minutes. Add the poblano, bell peppers and garlic and cook for 1 minute. Add the ancho powder and cook for 30 seconds. Add the BBQ sauce, 1/4 cup of water and ketchup, bring to a boil and cook 5 minutes or until it has thickened. Reduce the heat to medium-low, stir in the mustard, Worcestershire, honey, brown sugar and molasses. Cover and simmer for 15 minutes. Remove the cover, add the ground beef and cook 10 minutes longer. Add the vinegar, season with salt and pepper and stir in the 1/2 cup of parsley or cilantro.

This looks like a lot, but most of it is just adding ingredients. For the toast, I just buy garlic butter and butter the bread and then broil it. You can also buy spicy BBQ sauce and then follow the directions to make the Sloppy Joes.
