2 c. flour
1½ tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
4 eggs
1½ vegetable oil
2 c. grated carrots
8½ oz crushed pineapple (drained)
½ c. raisins (plumped and drained)
Optional - ½ c. chopped nuts

Frosting:
½ c. butter or margarine
8 oz. cream cheese
1 tsp. vanilla
1 lb. powdered sugar

Directions:
Directions:
Sift together flour, salt, baking powder, baking soda, and cinnamon.
Mix in the sugar, eggs, and oil. Add the carrots, pineapple, and raisins.

Bake at 350º F for 35-40 minutes in a 9 x 12 greased and floured pan.
Frost with cream cheese frosting when cool.

This is Dad's favorite cake. He had this recipe when I married him 40 years ago and I'm typing this from his original handwritten recipe. It's moist and delicious and always turns out great.
