10" Classic double crust

Filling:
1 - 29 oz can of yellow cling-free peaches, in heavy syrup
3 Tbsp reserved peach syrup
3 Tbsp cornstarch
1 c. sugar, divided
3 eggs
⅓ c. buttermilk
½ c. butter, melted
1 tsp vanilla

Glaze:
2 Tbsp butter, melted

Crust:
Prepare your favourite recipe and press bottom crust into 10" pie plate. Do not bake. Heat oven to 400ºF.

Filling:
Drain peaches, reserving 3 Tbsp syrup. Set aside. Cut peaches into small pieces. Place in large bowl. Combine corn starch and 2-3 Tbsp sugar. Add reserved peach syrup. Add remaining sugar, eggs and buttermilk. Mix well. Stir in butter and vanilla. Pour over peaches, stirring until peaches are coated. Pour filling into the unbaked pie crust, and moisten the pastry edge with water. Cover pie with top crust. Cut slits or design in top crust to allow steam to escape.

Glaze:
Brush pie top with butter, and sprinkle with sugar. Bake for 45 minutes, or until filling in center is bubbly and crust is golden brown. Cool to room temperature before serving. Refrigerate left over pie.
