1/2 c. (1 stick) butter
2-lb. granulated sugar
1 c. whole milk
14 oz. can condensed milk
1 tsp vanilla extract
2 Tbsp. syrup (Optional)

1. Prepare your pan by coating with lots of butter or line pan with parchment paper. Melt the butter in a large, heavy based pan over a med-low heat. Pour in the sugar and milk and keeping the heat on med-low, allow the sugar to dissolve, stirring occasionally. When everything has melted together and there are absolutely no grains of sugar left, add the condensed milk and turn heat up to medium, slowly bring to a boil, stirring constantly.
2. If you have a candy thermometer, the setting point is soft ball. Otherwise, keep a cup of cold water by the side of the pot. To test the tablet, drop a small piece into the water. If it forms into a soft ball, it's ready.
3. Take off the heat, stir in the vanilla extract and beat vigorously for about ten minutes, or until the tablet is thicker and slightly grainy in texture (It's easier and quicker to use a hand mixer.)
4. Pour into the prepared pan and smooth out as best as you can. I find a silicone spatula is best here.
5. Leave to set and cut into small squares.

The syrup is believed to help make the Tablet less grainy.
Substitute brown sugar for a more Toffee flavor.
TIP: Every grain of sugar MUST be dissolved before you let it boil. Take off heat immediately when a bubble appears. Give it a minute and put back on the heat.
NOTE: If the tablet does not begin to harden when placed in the buttered pan, just place back into the pot and let it boil again, keep stirring it for one or two minutes and again pour into your pan and it should begin to harden.
