2 tins Nestle sweetened condensed milk
2 large lemons
250 ml whipping cream
1 small packet of ginger biscuits
3 Tbsp butter melted
Fresh raspberries to decorate

Directions:
Directions:
Preheat oven to 180º C

Crush the biscuits, melt the butter, then press the mixture into the base of a tin or flan dish.
Cook in oven for 7 minutes, then cool. Mix condensed milk with juice and ribs of lemons. Stir until it thickens. Spoon onto cooled base.

Whip the cream and spread on top. Decorate. Enjoy!

This is a go-to family favourite that never fails to please the crowd. Sometimes I simply serve plain with crepe fraiche on the side or pouring cream.
I have also gently mixed in the beaten cream to the lemon mixture before spooning onto base.
It is best made several hours - even the day - before so the lemon flavour develops.
