1 8oz to 12oz package of cheddar cheese
1 10oz can cream of chicken
1 10oz mushroom soup
1 16 oz sour cream
½ cup chopped onion
¼ cup melted butter
salt and pepper to taste
1 32oz package frozen hashbrowns (shredded or cubed) semi thawed
1 -2 sleeves of Ritz crackers

Directions:

Preheat oven to 350º

Saute onions in a little butter until clear. In a medium bowl, add soups, sour cream and onions, mix until combined. In a large bowl add potatoes, salt, pepper, then soup mixture. Stir to cover potatoes. Then add in cheese and stir to combine equally.

Grease a 9 x 13 pan. Add mixture to pan.

Crush sleeves of Ritz crackers and add to melted butter, then cover the mixture with crackers

Bake uncovered for one hour
