1 bag of frozen cubed potatoes or 6 - 7 peeled potatoes, cubed
3 stalks celery chopped
2 -3 cartons chicken broth
½ stick butter
1 cup whipping cream
2 bags of shredded cheddar cheese
1 lb bacon, cooked, chopped
salt and pepper to taste
1 TBSP parsley
1 green onion, chopped (optional)
5 small red potatoes (optional)

Directions:
Directions:
Add potatoes to pot and add enough chicken broth to cover about one inch above potatoes. Add chopped Celery. Boil until thawed or cooked through. Use a large spoon to mash some of the potatoes. Some people like to remove some of the potatoes and place in blender to mash. Chop the red potatoes in fry like shapes and boil in a separate pot until just done but firm, drain. In the main pot, add salt, pepper, parsley, butter, one bag of cheese and ¼ cup bacon. Once the Cheese is melted add the whipping cream to thicken. You can always add more if is not thick enough. Then add the red potatoes.

Garnish with shredded cheese, bacon and green onion and serve with crackers.
