3 eggs beaten
16 ounces white or shoepeg corn
1 cup shredded Pepper Jack cheese
1 cup shredded Monterey Jack cheese
2 oz. diced pimentos, drained

Directions:
Directions:
In a large bowl, combine the eggs, corn, cheeses and pimentos
Transfer to a greased 2 quart baking dish
Bake uncovered in 350 degree oven for 35-40 minutes or until bubbly
