Ingredients: 1 bunch (or bag) of kale 1 tbsp avocado oil (or high smoke point oil of choice) 1 tsp salt

Directions:Preheat the oven to 400ºF. Line baking sheet with parchment paper. (Lining with paper instead of oil will ensure faster cook time.)
Add kale to bowl along with oil and salt then massage until leaves are well covered.
Bake kale for 7-9 minutes or until edges are brown and crisp. They will dry out when given time to rest after baking.
Store in a dry place if you don’t eat them all at once.
TIP: If you begin with a bunch of whole kale, wash it and drain the water really well, as wet leaves will make soggy chips. Use a paper towel to blot excess water. Tear the leaves from the stems in as big pieces as possible, keeping in mind the chips shrink as baked. Discard the stems or save for making broth. |

Notes: In an attempt to help us get more greens into our diet, Adam made a version of these chips that burnt to a crisp back at our first apartment. I still laugh a little to myself thinking about that night every time I make this recipe.
HINT: If you're not familiar with nutritional yeast, I know it sounds odd, but it makes for a great savory seasoning. You can give these chips more zip by adding ⅓ c nutritional yeast into the mix. Alternatively, you can make them a spicy snack by adding cayenne pepper to taste. Make it your own by adding whatever seasoning sounds good to you!
