1 bunch kale, center ribs and stems removed (reserve these for juicing or using for veggie stock later)
1 avocado
1 Tbsp apple cider vinegar
1 1/2 Tbsp flaxseed or olive oil (flaxseed oil is great for clearing skin!)
¼ cup nutritional yeast
3 Tbsp sunflower seeds
2 Tbsp pumpkin seeds
Salt to taste

Tear the kale leaves into small pieces, and place in a large bowl.

Massage the avocado into kale with fingers, covering the kale with avocado.

Add remaining ingredients to the bowl and stir, or continue to massage the mixture with your fingers until everything is well combined.

If you aren't worried about your breath, make it a garlic kale salad by adding 1 tsp garlic powder or minced garlic to the oil/vinegar mixture first. Or, wrap the salad in brown rice wrapper for portability!
