2 c. celery, chopped
2 1/2 teaspoons salt
1 1/2 sticks (3/4 cup) butter
16 oz. chicken broth
2 tablespoons chopped fresh sage
1 teaspoon black pepper
1 (1-lb) sour dough bread crumbs

Directions:
Cook onions and celery with 1 1/2 teaspoons salt in 3/4 stick butter in a 12-inch heavy skillet over moderate heat, covered, stirring occasionally, until tender, about 10 minutes. Add broth and continue to cook, uncovered, stirring frequently, until onions are pale golden, about 10 minutes more. Add sage, salt, and pepper. Add bread crumbs, Stuffing is ready to spoon in turkey or put in baking dish - 30 minutes at 350º.

I loved the smell of Dad making this stuffing early on Thanksgiving morning. It was later my brother's favorite day of cooking. I love to make my own stuffing and add variations: sausage, apples, varieties of breads, and seasonings.
