"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
2 Tbsp (approximately) Meat drippings
2 Tbsp (approximately) flour
Milk (depending on preference about 2 cups)
Salt & Pepper

Directions:
Directions:
After frying meat, pour off most of the grease until there is about a couple of Tablespoons left in the skillet. Leave on medium-high heat. Add the flour to hot grease and brown for just a few minutes. Add milk and stir to remove most of the lumps until it comes to a boil, then reduce to simmer. Stir frequently to judge consistency. If it is too thin after simmering a few minutes, then add a little flour, a Tbsp at a time. If it is too thick, add milk and continue to simmer til hot. Add salt and pepper to taste.

Personal Notes:
Personal Notes:
My parents always made this in a cast iron skillet to go with fried venison or fried chicken.
