2 Tbsp. Butter
1 lb. Ground Beef
1 pkg. Old El Paso Original Taco Seasoning Mix
3/4 c. Water
1 Sweet Onion, Diced
12 oz. Ez Matador Tortilla Chips
8-12 oz. Cheddar Cheese, shredded
1 Roma Tomato, Seeded and diced
1/2 c. Pickled, Sliced, "Tamed" Jalapeņos, drained (Optional)
1 Avocado, Diced (Optional)
Sour Cream and Salsa Sauce for dipping

Prepare vegetables.

Pre-Heat oven to 400 degrees.

Melt butter in cast iron skillet; then brown beef using potato masher to break up into small pieces. Drain excess liquid. Stir in taco seasoning mix and water. Bring to boil and simmer 5-minutes, or until mix has thickened, stirring occasionally. Remove from heat.

Meanwhile, lay 1-layer of chips in large rimmed baking sheet lined with parchment paper. Spoon half of meat mix over chips followed by half of onions and cheese. Add second chip layer and repeat same. Place in oven for 3-5 minutes, or until cheese has melted completely.

Remove and sprinkle top with cilantro, tomato, jalapeņos and avocados (if used). Serve with containers of salsa and sour cream for dipping.

Note: Try Adding 1/2 15 oz. can of Black Beans, drained and rinsed to meat mix.
