A little oil
1 onion
2 cloves garlic
1 carrot
1 pepper
2 courgettes
1 tin mixed beans/ chickpeas
1 tin tomatoes
Seasoning + herbs
Ground almonds or breadcrumbs
Grated cheese

Directions:
Directions:
Heat pan with oil. Add onion and cook until soft. Add garlic, then carrot and then other veggies and cook gently for 10-15 minutes.

Stir in beans, then add tomatoes. Season according to your taste.
Take off the heat. Top with ground almonds and cover with grated cheese.

Bake at 180º C for around 1 hour until cheese is browned

This is very easy! You can use any seasonal vegetables eg leeks, aubergine, turnips, mushrooms, etc...whatever you like. You could also add bacon or chorizo sausage after the onions.

You can prepare in the morning or the day before and then shove it in the oven when you want.
