Base:
1 cup flour
1/2 cup butter
1 tsp. baking powder
1 egg, beaten
1 tsp. milk

Mix ingredients together and press into a 9 inch square pan. Bake at 350º F for 15 minutes. Remove from oven, cool slightly.

Filling:
Raspberry jam

Spread jam on slightly cool base.

Topping:
1/2 cup sugar
1 egg, beaten
1 tsp. vanilla
1 1/4 cup coconut

Directions:

Mix well, spread mixture on top of jam layer. Bake in 350º F oven for 20 minutes or until browns nicely.
