5 lbs. potatoes (red potatoes, not peeled or Idaho-peeled)
1 onion, diced small
3 eggs
1 lb bacon
4 T. cider vinegar
1 T. mustard
salt and pepper

Directions:
Directions:
Bake potatoes. Fry bacon until crisp. Add onions at the end of the frying. Save 1/c. of grease for later. After potatoes are cool, cube in casserole bowl, baking dish or crock-pot. Fold in bacon. Mix grease, mustard, eggs, vinegar, salt and pepper. Add to potatoes and bacon. Bake at 350 º for 30 min or put in crock-pot to heat.
