8 oz very good Semisweet Chocolate, finely chopped
8 oz very good Bittersweet Chocolate, finely chopped
1 C whole roasted, Salted Cashews
1 C chopped Dried Apricots
1/2 C dried Cranberries

Directions:
Directions:
1. Melt the 2 chocolates in a heatproof bowl set over a pan of simmering water.

2. Meanwhile, line a sheet pan with parchment paper.

3. Using a ruler and pencil, draw a 9 x 10-inch rectangle on the paper. Turn paper facedown on baking sheet.

4. Pour the melted chocolate over the paper and spread to form a rectangle, using the outline.

5. Sprinkle the cashews, apricots and cranberries over the chocolate.

6. Set aside for 2-hours until firm. Cut the bark in 1 x 3-inch pieces and serve at room temperature.
