2 TBS each EVOO and Agave Nectar (or, honey).
1 TBS Balsamic Vinegar
1/2 tsp Salt, divided
1/4 tsp Smoked Paprika
Fresh Ground Black Pepper, to taste
3 C Tomatoes (cherry size), halved or quartered if larger
2 TBS Fresh Basil, minced or julienned
1 TBS Fresh Oregano, minced


WHITE BEANS
2 C canned White Beans, rinsed and drained dry
1/2 C Celery, diced
1 tsp each minced Garlic and minced Red Onion
2 TBS Fresh Italian Parsley, minced
12 Butter Lettuce leaves, stem ends trimmed clean

FOR THE TOMATOES:

1. Whisk together EVOO, Agave nectar (or honey), Balsamic Vinegar, 1/4 tsp salt, smoked paprika and pepper in a mixing bowl or, dressing container with tight lid.

2. Toss together tomatoes and fresh herbs in the vinaigrette.


FOR THE BEANS:

1. Mash the beans in another bowl; stir in celery, garlic, red onion, parsley and remaining salt.


PRESENTATION:

Fill each lettuce leaf with a scoop of bean mixture. Top with 2 to 3 TBS tomato-herb mixture.
