3 c all- purpose flour
1¾ tsp salt
½ tsp active dry yeast
1½ c warm water

Directions:
Directions:
In a large mixing bowl whisk together flour, salt and yeast
Pour in warm water
Stir with wooden spoon until a shaggy ball forms
Cover with plastic wrap
Allow to rise in room temperature for 12 to 18 hours

Preheat oven to 450ºF
Once temp is reached, place cast pot with lid in oven
Heat pot for 30 minutes

Turn dough out onto heavily floured surface and shape dough into a ball
Cover with plastic wrap and allow to rest while pot is heating

Once pot is hot, use floured hands to carefully drop dough into pot
Cover with lid
Bake for 30 minutes
After 30 minutes, remove lid and continue to bake for 15 minutes
Remove from oven and cool on cooling rack
Store in open paper bag
