1 package fresh mushrooms
1 T minced garlic
4 boneless, skinless chicken thighs
Salt and pepper to taste
1 T cooking oil
1 can chicken broth
1 c half and half or heavy cream
1 c grated Parmesan
Parsley for garnish
1 package of egg noodles (optional)

Directions:
Directions:
Wash and slice mushrooms. Season both sides of chicken with salt and pepper. Heat a large skillet over medium and add cooking oil. Cook chicken until golden brown on each side. Remove and cover with foil to keep warm. Add garlic, mushrooms and sauté. Add chicken broth and stir to dissolve all of the browned bits off the bottom of the pan. Add half and half and bring to a simmer. Turn heat down and simmer for about five minutes stirring often. Stir in the Parmesan until it has melted. Add chicken back to the skillet and heat over low until warmed through. Top with fresh parsley for garnish.

This dish can be served as is or over egg noodles. If serving over noodles double the sauce ingredients. More chicken can also be added if serving a large group.
