2 TB grated fresh ginger root
2 TB sesame oil
1 TB fish sauce or soy sauce
1 TB sugar
1/2 tsp reduced sodium soy sauce
1/4 tsp salt
1 cup cut fresh green beans (2 inch pieces)
4 cups fresh broccoli florets
1 large carrot, julienned
1 pkg (9 oz) fresh spinach
1/2 cup finely chopped unsalted dry roasted peanuts
coarsely chopped fresh cilantro & julienned fresh ginger root

Directions:

In a small bowl mix first 6 ingredients together

in a stock pot or steamer , steam all veggies (except spinach) just to crisp-tender. Add spinach & cook until just wilted (1-2 minutes)

Transfer veggies to a large serving bowl, pour ginger mix on top & toss to combine.

Just before serving, sprinkle with peanuts, cilantro & shredded ginger root.
