10 - 12 pieces of chicken thighs, breasts, and legs
2 cloves of garlic, finely chopped
1 T dried oregano
Salt and pepper to taste
2 T red wine vinegar
1 T olive oil
¼ c (or more) dried pitted prunes, chopped
¼ c green olives, chopped and pitted
2 T capers, with 1 or 2 T brine from jar
2 large bay leaves, crumpled
¼ c brown sugar
½ c white wine
Fresh cilantro, chopped

Directions:
Directions:
Combine chicken with all ingredients except brown sugar, half of the cilantro and wine. Cover and marinate overnight. Place chicken in greased casserole dish. Spoon marinade over chicken. Sprinkle with brown sugar and the rest of cilantro. Pour wine over all. Bake at 350 degrees covered for 50 to 60 minutes and uncovered for last 20 minutes. Baste often with pan juices.
